Click on the canvas and start typing "A little something to be thankful for..." Use the Enter key if you need to start a new line. Don't worry about the type size for now. Switch to the move tool when you are done typing.
Drag the text into position and use the corner handles to resize as needed. Double click in the bounding box to apply.
If you need to edit the text, double click the T icon in the layers palette to get back into text edit mode.
