The next step in preparing your reference photo is adjusting the color. From the Window menu choose Effects > Tonal Control > Adjust Colors. Bring the Saturation level up to about 50%. This effect will give you some nice color ranges to work with. Experiment a bit with this setting, the more additional color you add the more painterly and interesting your final image will be.
